Restaurants started the food revolution in the USA, as far as I can tell. Without the Alice Waters revolution, a few lonely people in every part of the country might have continued growing and preparing their own foods, trading a few things with neighbors, and eating local. With the best food in the country -- and in our state -- coming from farms near the restaurants, a lot of us are catching on to the beauty of local, organic, sustainable, fabulous food.
