A little cooking every day—that's good therapy for both cook and eater. Warm, roasted foods make the house smell as houses should, give the cook virtue points without requiring hours of work, and make January memorable.

I had wanted to tell you about some spectacular Kentucky celery and a lovely slow way to cook it, quite new to me, but a problem with the link to the online recipe means I'll only tease about that, for now, and offer something else instead. Here's an adapted Jamie Oliver approach for something at least as unusual to most of us in the US as the promised celery mystery recipe: this is Jamie Oliver's Chicken Cooked in Milk. Use a fine Kentucky bird and perfect Kentucky milk, and then let us know how you like it!
