John Granville, Sous Chef
Yesterday, thanks to my lucky volunteer gig co-hosting Hot Water Cornbread: Kentucky Food Radio, I got to meet and talk with a man I have admired for nearly four years. John Granville, recently promoted to sous chef at Smithtown Seafood, makes the wonderful menu and pristine ingredients at that magical place even better when he's manning the kitchen there.
We didn't ask John to dish on his own secret for making the most perfect French fries and fried seafood, crunchy salads, sumptuous soups and savory burgers.
