Catherine Hill's Holiday Green Jelled Salad
2 packages plain gelatin
1 cup cold water
1 can pineapple [crushed in own juices]
1/2 cup sugar
8 oz. real cream cheese
1 cup chopped nuts [pecans]
1 cup whipping cream, whipped stiff
Dissolve 2 packages gelatin into cold water.
Add pineapple, juice and all.
Add 1/2 cup sugar and stir.
Bring to boil. Cook 5 minutes.
Take off to cool.
Add cream cheese while still warm, and assist in dissolving by smashing with fork or utensil.
Let set until thick and cool....I often refrigerate.
Add 2-3 drops green food coloring - obviously optional!
Add chopped nuts and whipped cream.
Place in serving bowl.
Refrigerate until firmly set.
